Believe it or not!  I've made this twice this week, and have gotten "mmm"s from the family.

 

Ingredients:

BONELESS, SKINLESS CHICKEN BREASTS – 1 package (1 to 1-1/2 lb.)

EXTRA VIRGIN OLIVE OIL (A few glugs to marinate + a few more glugs for pan)(A glug = approximately a Tablespoon)

GARLIC – 2 Medium Cloves

SEASONING MIX – 1 to 2 Tablespoons, to taste (salt, pepper, paprika, onion powder, garlic powder, dehydrated tomato powder…)(Try 1/4 tsp. each, if it smells good, it should taste good!)

CILANTRO – 1 to 2 Tablespoons chopped

(Tip:  Cilantro and Parsley often turn slimy before I can use them.  I clean, dry, and chop one whole bunch and store it in a small plastic storage container with a paper towel folded or cut to fit the bottom.  I am able to use it throughout about a week whenever fresh, chopped cilantro is desired.)

LIME – 1/2

 

Directions:

1.  Place CHICKEN BREASTS on cutting board between 2 sheets of plastic wrap.  Pound with a heavy skillet until they are thin, so they will cook quickly and evenly.  (Makes lots of noise, piques kids' interest, lets Mom be aggressive – not to be done during nap time!)

2.  Place chicken breasts in large mixing bowl or glass dish.  Pour in a few glugs of EXTRA VIRGIN OLIVE OIL.  Mince GARLIC over bowl using a hand-held micro-plane grater (yes, I'm a Rachael Ray fan!).  Sprinkle SEASONING MIX over chicken.  Squeeze in juice from 1/2 LIME.  Get your hands messy by mixing up and slathering chicken breasts until well-coated by all ingredients.  (I suppose you could mix ingredients in a plastic, zip-top bag, but I'm trying to be "Green", here, and it feels kinda fun between the fingers!)

3.  Wash hands.

4.  Let chicken rest for at least 5 minutes – I start a pot of noodles for a side dish, for instance.  (Or accept that Friend Request on Facebook!)

5.  Heat a few more glugs of EXRA VIRGIN OLIVE OIL in large skillet over medium/high heat (I use non-stick for easier clean-up).

6.  Place chicken breasts in skillet (I like to cover the skillet with a spatter screen as it does spatter).   Cook for about 4 min. on each side, or until beautifully browned.
